Sahar Elhallak (At Home in Morocco) presents Moroccan Taktouka
2 medium to small Anaheim peppers or green peppers
2-3 medium tomatoes
1-3 cloves of garlic
1 tablespoon olive oil
1 tablespoon chopped cilantro
1 tablespoon chopped parsley
1 tablespoon cumin
1 teaspoon paprika
1/2 teaspoon cayenne pepper (optional)
Salt to taste
