Mahdi Blaine (Maroc the Casbah) presents Moroccan Harcha with Merguez Sausage Gravy
Ingredients:
For the Harcha:
1 3/4 cup semolina
2/3 cup melted butter or neutral oil
2/3 cup milk
1 tablespoon sugar
2 1/2 teaspoons baking powder
Pinch of salt
For the Merguez Sausage Gravy:
1 pound merguez sausage
1/4 cup flour
3 cups whole milk
2 teaspoons honey
1/4 teaspoon black pepper
Salt to taste
Mahdi Blaine is 26 years old and living in NYC, where he is a graduate student in Middle Eastern Studies at NYU, researching Moroccan statecraft in regards to Western Sahara. When he is not studying he is always experimenting in kitchen, either trying new dishes or cooking dishes that he grew up eating, and sharing the results on his Instagram page @marocthecasbah.
