Sahar Elhallak (At Home in Morocco) presents Moroccan Zaalouk
Ingredients:
3 medium-sized eggplants
2 large tomatoes
3-4 garlic cloves
1-2 tbsp chopped cilantro
1 tsp coriander
A handful of crushed walnut or fried pine nuts on top (optional)
4-5 dried tomatoes (optional)
Salt and pepper to taste
